Because McCain's problems aren't with the left or middle. It's the Right (the base of the GOP) that doesn't trust him, and for good reason. Rice has said she's (some-modifier) pro-choice. That alone -- and there are other considerations -- would further harm McCain's already-shaky support in his own party.
He needs to pick a running-mate with SOLID conservative cred.
